Banana & Blueberry Bread Recipe

I’d like to share with you this recipe I found about 8 years ago, I can’t remember where, but from the first time I made it, it came out great, and all my family loves it. A few months ago, I added blueberries, and the taste is amazing!

If you are invited to a friend’s house, for instance, you could bake this banana bread the day before, and bring it wrapped in a plastic film, decorate it with a bow and a card. It is a nice touch, and your hosts will love it. On the other hand, if you have a gathering at your place, you could place it on your table at tea time, or at any time. Your guests will love the scent and taste!

INGREDIENTS:

2 cups all-purpose flour

1 ½ teaspoon baking powder

½ teaspoon salt

1 cup sugar

1 cup milk

2 eggs

½ cup unsalted butter, melted

3 ripe bananas, mashed

1 teaspoon lemon juice

1 cup blueberries (fresh and dry)

INSTRUCTIONS:

Preheat oven to 350°F (180°C)

Butter a 9 x 5 in (aprox) loaf pan, line with a parchment paper, butter the parchment, dust with flour.

Whisk together flour, baking powder and salt.

With an electric mixer, beat butter, milk, sugar, lemon juice and bananas until combined.

Add the flour mixture and mix at low speed until combined.

Add the blueberries and mix softly with a spatula until combined.

Transfer batter to prepared loaf pan and bake until cake tester comes out clean. In my oven, it takes 1 hour 35 minutes.

Remember, each oven is different. When your banana bread is ready, write down the exact time it took in your oven to be ready.

TIP:

In order to prevent the blueberries from sinking into the bottom while baking, toss the blueberries with a teaspoon of flour before mixing them into the batter.
