I am a huge fan of brownies, I haven’t baked some in a while though, I don’t know why… I guess I’ve been obsessed with cookies lately.

This time I found a recipe for chocolate walnut cookies, but I called them Brownie Cookies in my kitchen because that’s what they taste like. They are delicious, fudgy and irresistible.

Here goes the recipe:

INGREDIENTS:

340 gr semisweet chocolate (preferably 60-70% cacao)

½ cup unsalted butter

3 large eggs

1 cup granulated sugar

2 teaspoons vanilla extract

½ teaspoon baking powder

½ teaspoon salt

2 tablespoons coffee, strong, room temperature

½ cup flour

2 teaspoons cocoa powder

1 ½ cups chopped walnuts

INSTRUCTIONS:

Preheat oven to 350°F (180°C).

Line one, or up to three baking sheets with parchment paper.

Melt chocolate and butter in a microwave safe bowl: heat in microwave for 30 seconds at a time, beating well with a spatula after each break, until it melts completely.

In other bowl, beat eggs, sugar, vanilla extract, baking powder and salt, on high speed, for about 5 minutes or until the mixture is thick and creamy.

Add melted chocolate and coffee and beat on low speed until combined.

Add flour and cocoa powder, beat until combined.

Add walnuts and mix until combined.

Cover the dough with plastic film and refrigerate for 30 minutes.

With the help of a spoon, place balls of dough on a baking sheet, about 2 inches apart from each other. You can use a measure spoon or a cookie scoop for the cookies to be about the same size. I use 2 tablespoons of dough on each ball.

Bake for about 12 to 14 minutes (rotating baking sheets half way through), or until the center is set but not firm. Do not overbake (in my oven it took 12 minutes). Remember, each oven is different, make sure to write down the time it took in your oven, for next time and remove carefully.

Let them cool completely.

Makes about 32 cookies.

I have noticed that these cookies taste much better the next day. Enjoy!
